The shiitake, also known as Donko or Not, is native to East Asia, which is cultivated and consumed in many Asian countries. They are known for their strong, earthy flavor - packed with umami thanks to its natural amino acid glutamate. When cooked, shiitake caps have velvety, meaty texture, while the stems can be tough—or pleasantly chewy, if cooked long enough.
